Grilled Figs with Gorgonzola Cheese & Walnuts

This is a favorite of many friends. This delicious mix of sweet, salty and nutty flavors will be a delight to your tastebuds!

Makes 16 stuffed figs, 8 servings

Ingredients

  • 16 fresh figs or you can use dried figs
  • 2 ounces Gorgonzola cheese or blue cheese if you prefer
  • 16 walnuts roasted
  • Olive oil for drizzling
  • Balsamic vinegar for drizzling

Directions

Preheat the gas or charcoal grill at medium high heat. Cut one inch slits into the figs making a cross across each fig. Stuff each fig with ½ teaspoon of cheese. Press the sides together to close. Brush the grill with coconut oil and grill the figs for 2-3 minutes until they begin to char. If roasting in the oven, preheat oven to 375°F (190.6°C) and bake for about 10-15 minutes with the cheese tucked in. Meanwhile place the walnuts on a parchment lined baking sheet drizzled with coconut oil and roast the nuts for about 8 minutes. You may add salt before or after you bake. Open the fig and add the walnut to each fig. Add two walnuts if desired.
