Cucumber Salad

This refreshing and easy salad is a cool starter for any summertime meal. The dill really brings out the flavor of the cucumber. Watch video here.

Makes 4-6 servings


  • 2 cucumbers sliced thin
  • 2 tablespoons kosher salt
  • ½ cup sour cream
  • 1 tablespoon white vinegar
  • 2 small red onions, thinly sliced
  • Pepper to taste
  • Dill to taste


Lay cucumbers in one layer and sprinkle liberally with salt. Let rest for 30 minutes. Take paper towels and blot moisture from cucumbers. Get them as dry as possible. Mix sour cream, vinegar and combine with red onions and cucumbers. Pepper and dill to taste and mix the cream together with vegetables.

Cover and chill at least 6 hours, preferably overnight, stirring occasionally.
