- 3/4 pound thick-cut unprocessed smoked bacon (16 slices)
- ½ cup maple syrup, Grade B
- 1 teaspoon of Dijon mustard
- Freshly ground pepper
Preheat the oven to 400° F (204.4° C).
Mix the mustard, pepper and maple syrup.
Place a baking rack on a baking sheet and arrange the bacon in 1 layer on the baking rack without overlapping.
Generously brush the maple syrup mix on the bacon.
Bake for 15 to 20 minutes or until the bacon begins to brown.
Remove the pan carefully from the oven as there will be hot grease in the baking sheet.
Carefully lift and place the baking rack to one side and discard the excess bacon grease.
Replace the baking rack onto the baking sheet, turn the bacon over and brush the bacon slices with the remaining maple syrup mix.
Bake for another 3 to 5 minutes, until the bacon is a warm golden brown.
Transfer the bacon to a plate lined with paper towels and serve warm.
Sometimes the bacon flares up due to the sugar content in the syrup. After turning the bacon over make sure to keep an eye out for any flare ups. It might be a good idea to toss the grease after the first maple brushed side cooking time.
