Butternut Squash Fries

You know you love French Friesheck we all do!  But sometimes we just wish we could enjoy them without the guilt.  So we went to work and created a delicious and healthy alternative  say hello to our Butternut Squash Fries!  Click below to check out how quick and easy it is to make a stack of golden goodness! Watch video here.

  • 1 large butternut squash peeled 2 pounds
  • 2 tablespoons cocnut oil
  • 3 tablespoons chopped fresh dill
  • Salt and pepper to taste


Preheat oven to 400°F (204.4 °C).

Rimmed (parchment paper) baking pan.

Cut the bottom off the squash so you have easy cutting surface.

Using a sharp knife or a peeler, remove the skin of the squash.

Cut the squash in half, remove seeds cut into bite size strips.

Toss the fries in a bowl with oil, dill and salt.

Place fries on a prepared baking sheet, making sure not to overlap in order to keep the fries cooking evenly.

Bake in the preheated oven until golden, tender on the inside and crunchy on the outside for 35 minutes or longer depending on your oven.

You may add parmesan cheese instead of the dill or any seasoning of your choice.

Eat while warm. This is a better option than yams, less carbs and calories.
