BLT Avocado Salad

This refreshing salad will make your tummy smile. Greens and reds provide great nutrients for a light snack or as an appetizer.

  • 1 avocado
  • ¾ cup grape tomatoes, cut in halves
  • 2 strips bacon, cooked until crispy
  • ½ cup scallions, chopped
  • ½ cup of spring lettuce cut fine or lettuce of your choice
  • ½ teaspoon Himalayan sea salt, more to taste


Make bacon using your desired method and cook until crispy. The EASIEST way to cook bacon is to place each slice on a baking sheet lined with aluminum foil, bake (never having to turn the bacon over) for 15 minutes at 350° F (177° C). If there are more pieces it will take longer so check after 15 minutes.

While bacon is cooking cut avocado in half and remove the seed.

Take a tablespoon and scoop the avocado all around and out of its shell. You can serve in a small dish or hold the shell if you want to use it for serving.

Turn scooped avocado on its back and cut lengthwise and then across making square cubes. Repeat with the other half.

Thoroughly rinse your lettuce and into small thin strips.

Using a small bunch of the cut lettuce, start to fill the avocado shell.

Add avocado and then your bacon pieces, tomatoes, scallions, and add a teaspoon of mayonnaise on top, if you wish.

Taste and add additional salt if needed. Mix well in the shell and serve.

For a bit more protein, add one sliced hardboiled egg and top each half.
