1lb grass fed ground beef 1 yellow onion, diced ¼ cup of diced celery ½ cup diced carrot 1 red pepper, diced ¼ cup tomato sauce 1 egg, whisked ½-¾ cup almond flour 1 teaspoon dried basil 1 teaspoon dried thyme 1 teaspoon dried parsley Salt and pepper, to taste 2 tablespoons of olive oil ¾ cup tomato sauce ½ cup fresh basil, chopped ½ teaspoon of garlic salt 3 pieces of unprocessed bacon (optional) Salt and pepper, to taste |
Preheat oven to 400°F (204.4°C). Place a medium skillet over medium heat and add a tablespoon or two of olive oil. Add your onions, red or green pepper, celery and carrots to the pan, cook until all have become soft and translucent. Carrots take a little longer or they may be al dente. Add this mixture into a bowl along with the rest of the ingredients and the ground beef. Use your hands to mix it all together. Put ingredients on a lined baking sheet and wrap with bacon lengthwise. Stretch bacon so that you can tuck underneath the loaf. Bake for 30 minutes at 400º F (204º C), then take out and turn oven to 500º F (260º C) to get bacon crisp. Place back in oven, this should take 5 minutes longer. Enjoy! |
