1½ cups almond flour
1 teaspoon coconut oil
1 teaspoon butter
½ cup canned pumpkin puree
2 packets stevia or monk fruit
¼ cup maple syrup
1 teaspoon pumpkin pie spice
1 teaspoon vanilla extract
½ teaspoon ground cloves
½ teaspoon ground ginger
1 teaspoon molasses
3 tablespoons cream cheese
1 tablespoon ground cinnamon
½ teaspoon baking powder
¼–½ cup chocolate chips
Cooking spray or coconut oil for greasing
Pinch of salt
Preheat oven to 350° F (176.7° C).
In a medium-sized bowl, place the almond flour, baking powder, and pinch of salt and mix well.
In a separate medium-sized bowl, add the pumpkin puree, cream cheese, egg, spices, stevia or monk fruit, maple syrup, vanilla extract, and molasses.
Add the dry ingredients to the wet ingredients and mix well.
Line a baking sheet with aluminum foil and grease with coconut oil or cooking spray.
Place 2 tablespoonsful of batter on the baking sheet. Press down a bit making them into round shapes.
Bake for about 15–18 minutes until lightly browned.
